Ingredients

  • 1 cup broccoli florets
  • 1 cup bell peppers, thinly sliced
  • 1 cup carrots, julienned
  • 1 cup snap peas

  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a pan over medium-high heat.
  2. Add minced garlic and grated ginger, sauté for 1 minute.
  3. Add tofu cubes and cook until golden brown, then remove and set aside.
  4. In the same pan, add more sesame oil if needed and stir-fry broccoli, bell peppers, carrots, and snap peas until tender-crisp.
  5. Return the tofu to the pan and drizzle with soy sauce.
  6. Toss everything together and season with salt and pepper to taste.
