Zucchini Noodles & Pesto

Ingredients

  • 2 medium-sized zucchinis, spiralized

Instructions

  3. In a food processor, combine garlic, basil, Parmesan, and toasted pine nuts. Pulse until finely chopped.
  4. With the processor running, slowly pour in the olive oil until the pesto is smooth. Season with salt and pepper.
  5. Toss the spiralized zucchini and cherry tomatoes with the freshly made pesto until well coated.
  6. Serve immediately, garnished with additional Parmesan if desired.
