  • 200g flat rice noodles
  • 200g firm tofu, cubed
  • 2 cloves garlic, minced
  • 1 cup bean sprouts
  • 2 eggs, beaten
  • 3 tablespoons tamarind paste

  • 3 tablespoons soy sauce
  • 1/4 cup crushed peanuts
  • 1 lime, cut into wedges
  • Chopped green onions for garnish
  • Fresh cilantro leaves for garnish


  1. Soak the rice noodles in warm water for 30 minutes until they are soft. Drain and set aside.
  2. In a wok or large skillet, heat some oil over medium-high heat. Add the cubed tofu and stir-fry until golden and crispy. Remove from the wok and set aside.
  3. In the same wok, add a bit more oil if needed and sauté the minced garlic until fragrant.
  4. Push the garlic to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until they are fully cooked.
  5. Add the soaked rice noodles to the wok, followed by tamarind paste, palm sugar, and soy sauce. Stir well to combine all the ingredients.
  6. Toss in bean sprouts and cooked tofu, stirring continuously.
  7. Remove the wok from heat and garnish the Pad Thai with crushed peanuts and lime wedges.
  8. Serve hot, garnished with chopped green onions and fresh cilantro leaves.
