Instructions

  5. Truss the chicken legs with kitchen twine and tuck the wingtips under the body.
  6. Rub the chicken skin with olive oil and season with salt and pepper.
  7. Place the chicken in a roasting pan and roast for about 20 minutes per pound, plus an additional 15 minutes.
  8. Check the internal temperature of the chicken. It should reach 165°F (74°C).
  9. Let the chicken rest for 15 minutes before carving.
