Mouthwatering Tofu and Veggie Stir Fry

Ingredients

  • 1 block of extra-firm tofu, cubed
  • 2 cups broccoli florets

  • 1 yellow bell pepper, sliced
  • 1 carrot, julienned
  • 1/2 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. In a small bowl, whisk together soy sauce, sesame oil, cornstarch, and water to make the sauce. Set aside.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add tofu cubes and stir-fry until golden and crispy. Remove tofu from the skillet and set aside.
  4. In the same skillet, add more oil if needed. Add minced garlic and grated ginger, sauté for about 1 minute until fragrant.
  5. Add broccoli, bell peppers, carrots, and snap peas to the skillet. Stir-fry for 3-4 minutes until the veggies are tender-crisp.
  6. Return the tofu to the skillet and pour the sauce over the tofu and veggies. Stir-fry for another 2-3 minutes until everything is well coated and heated through.
  7. Season with salt and pepper to taste.
  8. Serve the mouthwatering tofu and veggie stir fry hot, garnished with sesame seeds or chopped green onions if desired.
