Deliciously Creamy Risotto

Ingredients

  • 2 cups Arborio rice
  • 4 cups chicken or vegetable broth
  • 1 cup dry white wine
  • 1 onion, finely chopped

  • 2 tablespoons olive oil

Instructions

  1. Heat the chicken or vegetable broth in a saucepan and keep it warm.

  3. Add the chopped onion and garlic, and sauté until translucent.

  6. Begin adding the warm broth, one ladle at a time, stirring constantly and allowing each ladleful to be absorbed before adding more.
  7. Continue this process until the rice is creamy and cooked al dente, which should take about 18-20 minutes.
  8. Remove the skillet from heat, and stir in the grated Parmesan cheese, remaining butter, salt, and pepper.
  9. Garnish with fresh parsley and serve hot.
